Absolute game changer!

I know I may not be able to offset the carbon footprint of having this sent from France. That being said, not having to wash and scrub baked on sugar, dough, cheese or other yummy tidbits off of the baking sheet every time I use it is great. I used parchment paper, but when the broiler came on it would char the corners, and its a single use item. Foil is cheap but it can leech metal into your food and also its a single use item. To boot with the foil is that not all recycling places allow household foil to be recycled. I custom cut a few of these sheets to fir a spring form pan. Use them in my baking trays and now have some coming for my freeze dryer. You still need to wash them, but honestly as dip in warm soapy water and they are clean. Nothing seems to stick to it. Worth the cost, hopefully worth the energy it takes to get it over to this side of the ocean.

Only Good for Baking Things Without Juices

These are really helpful for baking cookies or pastries or even vegetables. However, if you are baking any meats or fish, then you will definitely just want to use foil that you can curve at the edges because the juices will just seep out and under the mat and bake onto the pan like normal. I like that they are reusable and that we don't have to use nearly as much foil or nonstick spray. I do like them, I wish they had lips to keep juices of meats contained. They are a little annoying to clean, but you can put them in the dishwasher which is nice. They are not broil safe which is a bummer. I've had this one and two other sizes for three years and one of them has a little bit of discoloration now and another has an edge that is kind of unraveling. The coating has come off and a small piece is kind of dangling off. So, they are fairly durable.

Just what you need

We love our silpat and use it all the time. It's easy to clean, but after a while, we feel like it is picking up an oily fish scent from all the time we cook fish on it. Haven't figured out a way to get it off, so we bought a second one to use with things we didn't want picking up a fish taste.

Best for cooking anything from vegs to baked goods.

I love this mat. I use it for veges, meats, and cookies etc. Things never burn and I don't use cooking oils etc. At 350, you can cook chicken fillets for 20 minutes and they are perfect. The same with asparagus, although I usually shake them in a little olive oil and salt first. The mat does the rest and they are really tasty, with minimal time.

I use this all the time. It's easy to clean, I just let it soak in hot water and soap for a few minutes before scrubbing.

Every cook should have one

I had a cheap silicone baking mat that came in a subscription box. I liked it enough to be intrigued by the concept, but purchased this one because of ATK’s recommendation and it really is worth the extra expense. It’s superior in every way. Stays totally flat during baking. Cleans easily; I scrub it gently in a rimmed baking sheet on both sides and roll it loosely in a dishtowel to dry. I’ve used it both baking cookies or roasting veggies and it works beautifully in either case. Does inhibit some browning so stick with a bare baking sheet if that’s what you’re after. I plan on giving a couple as gifts, really anyone who cooks could use it, not just for baking.
